Saxon and Parole

Saxon, a stately black racehorse, was the first to wear New York tobacco heir Pierre Lorillard’s signature racing colors of cherry & black. The stallion won the Belmont Stakes in 1874 and sired more winners in retirement. Saxon’s career, respectable as it was, paled in comparison to his unassuming stable mate: the indefatigable PAROLE. Born in 1873, PAROLE had the physical bearing of a field horse. He was hardly expected to be a champion—but win he did, all around the nation and across the Pond too. The English labeled him the “Yankee Mule,” and described him as “light-necked, rough-coated, leggy and curby knocked”. PAROLE quickly became one of the few American horses ever to win prime English events. When he retired at twelve, he had earned more money than any racehorse in America. He inspired a feverish new interest in racing—even inspiring an NYC crafted spirit, “PAROLE Whiskey."

I, a vegetarian, went with another vegetarian (very much not the target audience) for their Impossible burger. My friend, the birthday boy, got their classic of a million mushrooms, but I don't like mushrooms and was planning to order a couple of sides for dinner. But! Our server told me they have a vegan option that comes with avocado and stuff! I was very pleased. I don't love the impossible burger (too meaty for me), but it was well-prepared. The service was excellent.

Great atmosphere and amazing food! Service was ok although a bit slow. Food was delicious, even though my steak tasted a bit like old steak (not aged, Old steak) but otherwise amazing, I would go back and recommend!

I feel like the service and quality has become complacent in an otherwise charming and cool Noho spot. There are vegetarian and vegan options (3-4) and the quality seems great, the prep and service however, lower the execution of this menu and presentation. I had to wait an additional 30 min regardless of having a reservation and coming on a presumably relaxed Tuesday (after dinner rush), and I wasn't acknowledged in the bar for half that time (at which point, I figured I would be sitting sooner than later and wanted to just wait to sit to order... it wasn't busy... ya, that was a mistake. It took forever for them to clean the 2 two tops that had been empty for a while). Our plates were tasty but not prepared as well as the ingredients deserved, but overall it's good enough to come here for a diverse menu or a drink. Save the real steakhouse/seafood spending for a better experience, but come for the bar and dessert menu.
